Seriously awesome recipe

I'm not one to talk about recipes. Or cooking tips. Or what side dish I served with what pot roast. I don't feel like it's something that's super interesting and I don't get all tripped out over what's going to get "rave reviews" from "hubby". 
However, there are times in life, recipes in life, that warrant some talking. I think this is one of them. I found it on Pinterst, of course, and it is sogood.

I won't even bother typing it all out, I'll just give you the links. You can find the pin here and the recipe itself here. (Pinterset says the pin is "suspicious", but I have no idea what that's about. Unless Pinterest is against chicken.) 
Normally, I'm pretty much not a fan of crock pot meals. I think they all seem kinda mushy and the clean-up sucks. I know, I know. I'm crazy. But I hardly use my crock pot at all. Until this beauty came along. I've been eating it, like, once a week. 

Now I'll just throw a picture at you and share some opinions. 
(I, unfortunately, only have these two crappy pictures. I thought I remembered taking more, but am just as unprepared for life as usual. If you want to see what it looks like in better lighting, you should make some!)

What did you think? It looks tasty, right? It is. 

Here's what else is good about it:


  • This stuff takes less time than it says. I don't know how or why, but mine only takes like 3 hours, not the 4 that the original suggests. I used thawed chicken breast, instead of frozen but I don't know if that would affect the cooking time like that. Either way, it cooks pretty quick. 
  • I have most of the stuff that goes in it. I don't like to cook things with lots of ingredients or recipes that require me to buy a jar of something I'll never use again. This keeps it simple. And simple is cheap.
  • It's decently healthy. I think I totaled up the calories to be like 284 per serving. To me, that's pretty good. I use 6 oz. of Greek yogurt instead of sour cream and add a cup of cheese and 2 cups of brown rice. 
  • It makes a ton! I seriously ate this meal for like 3 days. Given, my family is small, but it makes a good amount. Especially if you add the cheese and rice. 
  • The leftovers are amazing! This is coming from someone who does not eat leftovers. At least not ones that have meat in them. I'm a leftover snob. Leftovers get sent to work with the man. Reheated chicken or beef...horrible. But these leftovers are awesome! They taste just the same after 3 days as they did the first night. I cringed when I saw how much leftover I had, but trust me. You won't be sad about finishing these.
